📄 Image slot — kulfi flavour selection seasonal from kesar pista to mango specials.
Udaipur’s kulfi rotates with the fruit calendar: kesar-pista and malai all year, mango through the summer peak, and the hot-milk desserts take over the counters as the nights cool.
The seasonal rounds
- The classics: kesar-pista and plain malai, the mawa tradition frozen, available in every season and the benchmark for judging a new counter; the mawa guide explains the base they share.
- The summer specials: mango kulfi runs while the fruit is ripe and cheap, usually the hottest months, and rose and sitaphal (custard apple) appear around the monsoon evenings described in the monsoon guide.
- The winter shift: kulfi does not vanish, but the counters’ hot half takes over, and the fireplace cafes serve the warm-milk desserts the season asks for.
The reliable tasting ground is the Sukhadia Circle, where the dessert institutions sit within one square and the classics stand side by side. Whatever the flavour, the test is texture: dense, slow-melting mawa kulfi, not airy ice cream, and a good stick comes out of the mould clean.
