Last updated: September 2026 ยท Method: guidance built from our food research (all dishes below appear across our sourced guides). A dictionary, not a ranking.
Marwari menus can read like a puzzle โ and ordering blind means missing the good stuff. This dictionary covers the dishes you’ll meet in Jodhpur, what they are, and the one-line verdict on each. Keep it open at the table.

The mains and plates
- Dal baati churma โ the signature: wheat baatis roasted and ghee-flooded, panchmel (five-lentil) dal, and churma (sweet crushed baati with jaggery). Our roundup ranks where to eat it.
- Ker sangri โ desert berries and beans, the signature Marwari vegetable: tangy, spicy, often dairy-free as served, but recipes vary โ many versions use ghee or curd, so vegans should ask. Born of scarcity, now the region’s pride.
- Gatte ki sabzi โ gram-flour dumplings simmered in spiced curd gravy. The clever dish that answers “no vegetables in the desert.”
- Kadhi โ gram-flour-thickened buttermilk curry, usually with pakora dumplings in it (kadhi pakoda). Cooling counterpoint to the dry dishes.
- Bajra roti โ pearl-millet flatbread, the winter bread of Marwar; hearty, slightly bitter, made for ghee.
- Laal maas โ the fiery mutton curry built on Mathania chillies (non-veg kitchens; our guide covers where).
- Safed maas / jungli maas โ the white almond-cream curry, and the hunters’ original: meat in smoked ghee with chilli and salt.
The street and snacks
- Mirchi bada โ chilli fritter, the city’s signature bite (the Chaudhary-vs-Surya debate lives here).
- Pyaz kachori โ onion kachori; breakfast royalty.
- Mawa kachori โ the sweet dessert version, Jodhpur’s invention (see the sweets guide).
- Papad ki sabzi โ papads cooked into curry; the quick-fix dish that became a classic.
- Chaas โ salted buttermilk, the desert’s hydration technology. Drink it with lunch; it’s not optional culturally.
The sweets corner
- Mawa kachori, ghewar, jalebi, malpua, rabri โ all covered in the sweets guide with their seasons.
Questions worth asking
Why is Marwari food so dry and so rich?
Desert logic: no water for gravies (dry dishes), and ghee as preservative and fuel for hard labour. The cuisine is an engineering solution to the Thar โ which is why it tastes like nowhere else.
What’s the one dish for a first night?
The full thali โ every classic above in miniature, refills included, no wrong choices.
