Last updated: September 2026 · Method: guidance built from our sourced mirchi bada research (the Chaudhary-vs-Surya debate). A dish profile.

Mirchi vada (also mirchi bada) is Jodhpur’s street-food crown: a fat green chilli, deseeded and stuffed with spiced potato, batter-fried to a shattering crust, served split open with sweet and spicy chutneys. It’s the city’s staple bite — eaten at breakfast counters, market stalls and evening stands since before anyone counted.

What it is

The chilli is a thick-walled green variety, heat present, violence absent. The potato stuffing carries the spice; the gram-flour batter carries the crunch; the chutneys carry the balance. Approx ₹30–60 at the counters (from our sourced listings). The Chaudhary-vs-Surya debate is the city’s live argument about who makes it best, this guide doesn’t settle it, it maps it.

Where to eat it

Chaudhary Namkeen (Sardarpura) holds the cross-platform consensus; Surya (Jalori Gate) holds the rival camp; Shahi Samosa’s version tops at least one local’s list; and the Clock Tower circuit carries its own credible counters. The full argument is in the debate guide.

Questions worth asking

How spicy is it, really?

The chilli’s seeds are mostly out; the bite is crisp-batter, soft-potato, then a warm build. Sweet chutney is the regulator. The travellers who fear it are 90% wrong; the ones who fear the evening after are 90% right about portion control.

When’s the best time?

Out of the fryer, morning counters and evening stands. A mirchi vada that sat an hour is a different (worse) animal.
